Have read some posts (e.g. http://www.elantraxd.com/forums/showthread.php?t=16087)
where people stripped the threads of the PCV valve and the
"whole thing" came off.

Questions:
1. What does the "whole thing" refer to?
2. How to avoid having this happen to me?
What exactly should and shouldn't I do?

I am gonna have to replace the PCV valve for the first time and am
feeling a bit nervous.

I'd say just becareful taking it out and when you put it back in becareful not to cross thread it or else youre screwed and dont tighten it too much. Probably tighten til it feels snug but don't force the tightness.

Oh yeah you might not have to replace it. Someone on here said you can just take it out and clean it with brake cleaner I believe

Yes you can clean it. I took mine out no problem and if it was going to strip it would be me that was going to do it. Take the hose off fit a box end wrench on it and gently tug it in the right direction. It should pop and then hand loosen the rest of the way out.
